Chili con Carne

Our family loves this served with peanut butter & jelly sandwiches and topped with shredded cheddar.

Ingredients:
1 lb ground beef
3 cans hot chili beans
1 medium onion, diced
Mexican-style chili powder, to taste

Instructions:
1. Brown ground beef and saute onion over medium-high heat. (Tip: No need to use an extra skillet. Do this in the same pan you'll be using for your chili.)

2. Add chili beans and chili powder. Simmer over medium heat until desired temperature, usually around 20 minutes. (Tip: Add chili powder slowly. Add a little, simmer a few minutes, taste. Add a little, simmer, taste. And so on.)

Easy, Meaty Meatloaf

Ingredients:
1 lb ground beef (I use 93-96% lean)
2 large eggs
3-4 TB flour
1 packet dry onion soup mix
Ketchup

Instructions:
1. Preheat oven to 375F.

2. Mix ground beef, eggs, flour, and onion soup mix, by hand, in a small mixing bowl until fully combined.

3. Press meat mixture into pan. (Tip: I use one half of a 9x9 baking dish or a loaf pan. If you want a full 9x9 dish, double this recipe.)


4. Top with ketchup. (Tip: Squirt ketchup on top of meat mixture until nearly covered. Then use a small rubber spatula or butter knife to spread it evenly.)


5. Bake for 45 minutes to 1 hour. (Tip: I find that 93% lean beef takes a little longer to cook than 96% lean.)
